This recipe gets mixed reviews.  But I like it, so it’s going in.  You will need:

  • Pizza crust from my recipe
  • BBQ sauce of choice (about 1/4 cup or so)
  • 1 potato
  • 1 pound crumbled, fully cooked ground beef
  • shredded cheddar (about a cup or so)

Make and knead the pizza crust from my recipe, but do not bake.  You will want a cast iron skillet for this.  Mine was ten inches.  The pizza dough recipe will need to be divided in half, and then rolled out to fit the skillet.  (I am NOT perfect!!!)

Pour some olive oil in the skillet.  Again, do not use vegetable oil of any kind, only olive oil.  Be sure there’s enough to cover the whole skillet.  You’re basically frying the crust.  Now, place the dough in the skillet, bringing the sides up.  If you want, you can roll the sides down some to make it more even and fluffy.  Feel free to brush oil on the outside of the top of the crust as well.

Let rise until the desired thickness.  I suggest a thicker crust for this recipe.  Bake at 425 for 7 minutes.  You do not want brown spots on your crust.  Bust any bubbles.

While it’s cooking, slice your potato and brown your beef.  I use a slicer that is probably illegal now as it will slice your arm off if you’re not careful.  It was my grandmothers and is still wonderful!

(Hmmm…what do you know?  They’re not illegal!  That’s kinda scary.)
Anyway, spread BBQ sauce on the crust.  You don’t want a large amount, but you want to be able to taste it too.  Remember, you can always add more.  Top with half of the beef and sliced potato, ensuring to spread it all around evenly.  Top with cheddar cheese.

Bake at 425 for 15 minutes.

Remove carefully with a metal spatula onto a pizza pan for cutting.  At this point, your other half of dough is probably risen enough to just go on in.  Add a little more oil to the pan and follow the above for the other half.  Enjoy!

TIP:  If your potato isn’t fully cooked, it’s probably not thin enough.  If you can’t slice it thin enough, try cooking it beforehand and placing the cooked potato on the pizza.
